- 2 tablespoons umeboshi vinegar
- 2 tablespoons juice
- 1 cup water (more as needed)
Instructions :
- Heat a splash of oil during a medium-large pot over medium heat. Add the shallots, garlic, jalapeño, and some pinches of salt, and cook till softened, concerning five minutes.
- Add the flavoring, stir, then add the black beans and stock. Simmer on low heat for twenty some minutes.
- Blend the soup, adding water or a lot of stock if it's too thick.
